Zucchini Bread Made with Butter





Zucchini Bread

3 eggs well beaten
1 cup soft butter 
2 Cups Sugar
2 cups grated zucchini
2-3 teaspoons vanilla (more robust vanilla, use less)
3 cups flour
1 tsp salt
1 tsp soda
1/4 tsp baking powder
3/4 tsp. nutmeg
1 Tablespoon cinnamon (or less to taste)
1 cup chopped nuts (optional)

Mix butter and sugar thoroughly in an electric mixer.  Add eggs, vanilla and then stir in shredded zucchini.  Sift or thoroughly stir together the dry ingredients. Mix dry and wet ingredients and bake in two greased bread pans for 45 minutes to one hour at 350 degrees.
