Double Apple Muffins are my original adaptation of muffins made with Bisquick. Since we try to avoid commercially processed foods, I make my own mix. I know what ingredients are in the mix and don't have to worry about fillers, food enhancers, or preservatives. You can find the recipe for the B-Quick Mix at this link.
2 Cups B-Quick Mix
6 Tablespoons of Sugar
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 cup applesauce
1 Egg
1/2 Cup Milk
1 apple cut into small, bite-sized pieces.
Combine the B-Quick mix, sugar, cinnamon, and nutmeg in a bowl. Add applesauce, egg, and milk. Mix thoroughly by hand, just making sure all of your dry and wet ingredients are incorporated. Mix in the pieces of sliced apple. Put 1/3 cup of mixture into each section of your non-stick muffin pan. Bake in a 350-degree oven for about 15-20 minutes or until done. Don't overbake. When you touch the tops of the muffins and they bounce back, they are ready to be removed from the oven.
You can adjust the sugar and spices in this recipe to your individual taste.
