These pancakes are delicious! You start with the B-Quick mix that you make up ahead of time and store in the pantry. (Find the recipe for the mix at this link.)
Pancakes
2 cups B-Quick Mix
2 Tablespoons Sugar
1 Egg
1 cup milk
2 Tablespoons Sugar

1 cup milk
Add sugar to mix. Lightly beat egg and milk together and add this to the dry ingredients. Stir together just until mixed. The batter will be lumpy. You can add more milk for a thinner batter if you prefer.
Cook on a hot griddle or cast iron skillet. You may find that you need to grease the skillet/griddle a bit to keep the pancakes from sticking. Cook until the pancakes have small bubbles in the batter, flip, and cook until brown on both sides and done in the middle.
Serve with your syrup of choice or with fruit.
